Nankhatai - A sweet indian cookie

Yippeee! My first successful attempt at baking from the scratch! :) This is really a very simple recipe, but when i saw the actual cookie and not just crumbs (a previous disaster, sigh!), my excitement had no bounds. I even forgot the amount of ghee that went into this recipe and ate some without feeling guilty. I started imagining myself baking all those fancy cakes and... I know, i sound silly and let me stop it here :)

I had this small piece of paper in my recipe collection (of bits of papers!) that had this recipe. I dont remember where i copied this recipe from, but it was really yummy.

Ingredients :
All purpose flour - 1 cup
Powdered Sugar - 1/2 cup
Ghee - 1/2 cup ( i actually reduced little bit..it was between 1/3C and 1/2C. I just couldn't make my hand pour all the ghee that was required :))
Cardomom powder - a pinch (optional)
Baking soda - 1/4 spoon.


Method :
Mix all the ingredients well. It will be damp and no need to add water.
Divide them into equal sized portions and roll 'em into balls and flatten them between your palms. Place them in a baking pan covered with wax paper and bake at 350F for 20-25 minutes. When it is done, it'll have slight cracks on the top. My husband and my kids loved it. My kid ashu even said that he liked it better than Sandies cookies ;-)

I made it for my husband and kids and i'm sending this for Alka's Just For You event. I'm so glad she extended the deadline ;-)

Hi Vibaas,

guess everything was over as soon as you finished baking?!! never ate Nankhatai, but the recipe is a bit like those crumbly nei biscuits (used to eat in india). with the amount of butter you've used, it must be terribly powdery and soft! yummy biscuits!
