Salads and Awards

Simple Carrot Salad :
When we were kids, my mom used to make a salad or raitha everyday, in addition to what she cooks. I guess it was her way of sneaking some veggies into our diets :) This carrot salad was my favorite. It's easy and yummy. Nowadays, i have started making salads frequently too.

Ingredients :
Carrots - 3
Green chillies - 2
Lemon juice - 1 spoon
Salt to taste minced cilantro - 3 or 4 spoons (optional)
Mustard seeds and urad daal for seasoning.


Method :
Grate the carrots and add salt and cilantro and mix well. Heat little oil and splutter mustard seeds in it. Add hing and urad daal and fry till the urad daal is golden brown. Add finely chopped green chillies and fry for another minute. Add it to the carrot and add the lemon juice and mix well.
Variation :
You can add yogurt instead of lemon juice and have it as raitha.

Cabbage and Carrot Salad :
I'm not a big fan of cabbage and i know only 2 recipes with it...the usual cabbage curry with green chillies and the cabbage poricha kootu. I have seen this cabbage and carrot salad at the indian restaurent all the time, but stayed away from it. It didn't look appealing at all. Sometime back, we went to the indian restaurent with our friends for lunch buffet and as usual i avoided this salad and moved on to the pakoras (Talk about healthy eating! :)) My friend asked me to try this and said it's really good. I tried it hesistantly and loved it. Never thought it would be good :) I tried it the next day at home and it has become a regular at my place now.

Ingredients :
Cabbage - 1/2
Carrots - 2
Mustard seeds and hing for seasoning
Lemon juice - 2 spoons Salt to taste
Green chillies - 2,3 (finely chopped) - Optional.

Method :
Shred the cabbage. Heat little oil and splutter mustard seeds and hing. Add green chillies and saute for a min. This is optional. My husband likes it little spicy, so i added green chillies for him. Add the shredded cabbage and saute just for a minute. It should be crunchy and should not leave any water. Let it cool. Add grated carrots, Salt and lemon juice and mix well.

I love the lemony flavour of this simple salad. This is my quickie salad choice too especially on lazy days with just some curd rice.

thats a good one..adding cabbage to the salad..never thought of making it at home though we eat raw cabbage in restaurants

vidya same pinch. i too dont prefer cabbage.your salad looks yummy.will try.i use cabbage to make pakodas and rarely for curry.

Looks colourful and lovely! I too make this salad. I shred carrot, cabbage, bell peppers, cucumbers with a squeeze of lime juice, salt and pepper. Congrats on ur awards.
