Sepankizhangu (Colocasia / Arvi) Roast


This is one of my favorite dishes - my mom's signature dish :) I love it so much. Every time i goto india i eat only 3 curries at my mom's house - this, suran roast and tindora...

Ingredients :
Frozen cut colocasia - 2 packs
Sambar powder - about 3 spoons (less or more depending on the spice level you like)
Salt to taste
mustard seeds, urad daal and hing for seasoning
Cilantro for garnishing


Method :

Steam the frozen colocasia in microwave for 10 minutes.
In a pan heat about 4 or 5 spoons of oil. Pop mustard seeds and add hing and urad daal and
fry for couple of minutes till urad daal is golden brown.
Add colocasia and add sambar powder and salt and saute till it gets roasted.
Add more oil if required. This is not a good dish for diet conscious people :)

Note : Here i get only frozen colocasia. If you get fresh ones you can pressure cook it upto 3 whistles and remove the skin and cook it following the same method. Also, if you dont have sambar powder, you can just use redchilli powder and it tastes good also.
