Spinach Raita / Keerai Pachidi


Both my kids are picky eaters but, fortunately they both like Spinach and Methi. They love both in any form. I make parathas and dosas with them and they both love it. My big boy loves keerai masiyal mixed with rice too. Only condition to it is i need to give it with Kurkure :) He loves that combination. I tried making raita out of the half bag of baby spinach that i had after making spinach dosas for them and it was really great! My husband liked it too. It tasted great with Vatha kuzhambu.


Here's how i made it :


Ingredients :


Spinach - 3 cups (chopped)
Green chillies - 4 (finely chopped)
a small piece of ginger - finely chopped
Yogurt - 1 cup (approximately)
Mustard seeds, urad daal and hing for seasoning.

Microwave the spinach for 3 minutes.

In a pan, heat some oil and pop mustard seeds and add urad daal and hing and fry till urad daal turns golden brown. Add the chillies and ginger and fry for 2 more minutes.

Add the spinach and salt to taste and cook till it's done. It gets cooked in 2,3 minutes.

Let it cool and add beaten yogurt to it.
