Spicy Cucumber Raita

Ingredients :

Cucumbers - 2 (big)
Green chillies - 2
Grated Coconut - a spoon
Minced cilantro - 2,3 spoons
Salt to taste
Yogurt - 1 cup

Method :

Grate 1.5 cucumbers. Chop the remaining 1/2 cucumber and grind it with green chillies, minced cilantro and coconut. Add it to the grated cucumber. Add salt and beaten yogurt and mix well. Serve chilled.

This is spicy and yum! I usually have it with Pulao or Tomato Rice or Tomato Poha, but it is good to be mixed with curd rice too.

Sending this to Neha's AFAM-Cucumber.

Hi there,

I came across your blog and saw that you love to create vegetarian recipes. Stonyfield Farm makes Oikos Organic Greek yogurt that is great for cooking with, and also a great protein source for vegetarians. Oikos is also the only organic Greek yogurt on the market today.

I'd love to send you some free coupons to give Oikos a try. Just shoot me an email at kdrociak@stonyfield.com if you're interested and let me know where to send them.

Thanks!
