Zucchini and Spinach Vermicelli Upma

I always have to find ways to sneak some veggies into my kids' food. This is one way where i could do it successfully :-) I've already posted the recipe for Vermicelli Upma and this is prepared the same way except that i have added some vegetables to it and made it healthier :-)

As i said in my earlier post, my kids love vermicelli upma since they are like noodles and sneaking some vegetables into it was easy, especially a vegetable like Zucchini which blends with the color of the vermicelli!





Here is the recipe :
Ingredients :
Roasted vermicelli - 1 small pack
Green chillies - 3 or 4
Zucchini - 1 medium sized (finely grated)
Spinach - 1 cup (finely chopped)
Cilantro - for garnishing
Roasted Cashew - handful
mustard seeds, hing, urad daal for seasoning
Method :
In little oil, pop mustard seeds, add hing and urad daal and fry till urad daal turns golden brown.Add the grated zucchini and spinach and saute for 2 minutes. Add approximately 3 cups of water and let it boil. Add the roasted vermicelli and salt to taste and cook till it is done. Add cilantro and the cashew pieces. Add more water if required. My first kiddo who is very picky with vegetables didn't even notice the zucchinis ;-)

This is sure healthy recipe dear...always tried mix veggie upma but never this combo...

This is serious comfort food, isn't it? I've never thrown zucchini in with vermicelli, but I can't imagine it being anything but tasty :)

Never tried of adding SPinach to Upma.. sounds different... and is a must try as it sounds healthy!!

Hi, nice version of vermicelli upma...few days back i made a plain one :)...reg the 101 recipe event..you can use anything and prepare omelet....sky is the limit..
