Besan Burfi and Meme

The sunday before Diwali we had a party here and i signed up for Besan burfi since it sounded close to mysore pak. To start with, i was not in any mood to celebrate diwali this year and then that week was very hectic and to top it, there was a birthday party the evening before the diwali party. I started to make this sweet at 11 in the night!! :-O The site that i took this recipe said it was a very easy breezy recipe and the outcome looked too yummy. So, i was still confident that i will be done in 15 minutes or at the most 30 minutes. The original recipe did not call for water. It only had besan, sugar and ghee and i kept stirring thinking that it will start to become little fluid for me to transfer to the greased plate. After nearly 1 hour of painful stirring nothing happened. It was as powdery as ever. I was so sleepy, tired and was about to cry. I decided to go ahead and add some water and it was done in 5 minutes after that. Wish i had done that much earlier. When i was done with it i decided never to post this painful recipe, but it tasted so good. It was melt in the mouth kind and tasted yummy. Both my kids kept asking for more and my first kiddo said it was as good as diamond sweet (kaju katli) and my toddler dragged a stool to the counter top and started picking more from the container. I changed my mind and decided to post it anyway. Atleast i can give you a tip on how to cut down the cooking time so you don't have to go thro' the whole painful process :-) I am not going to say the original recipe was bad, but it just didn't work for me. I probably made some mistakes. Anyways, here is the recipe in my way :-)

Ingredients :

Besan (Chickpea flour) - 1 Cup
Sugar - 1Cup
Ghee - 3/4th of a cup (The original recipe called for only few spoons and i've had bad result with mysore pak with less ghee, so i increased the qty of ghee)
Cardomom powder - a pinch
Saffron - a pinch




Method :

Melt the ghee in a pan. Roast the besan in the ghee. Keep the stove between sim and med-low. Keep stirring till the raw smell goes away. Now this was my problem area too. I had cold and my nose was completely blocked. So, i took some extra time to roast it :) Also, i feel the correct procedure would have been to roast the besan in few spoons of ghee and then add the rest later.
Now add the sugar, saffron and cardomom and stir for sometime. Add 1/2 cup water and when it is of halwa consistency and leaves the pan on the sides, transfer it to a greased plate and let it cool. Cut into desired shape and enjoy the burfi melting inside your mouth :)

Note : Please increase the quantity of water if you still don't get the desired consistency.

Enjoying each moment i spend with my kids. They will grow up soon..so i want them to have the best childhood that they can cherish forever.
Teaching my kids good values and to take time to enjoy small things in life, no matter how busy they are/will be.
Thinking about the 6 months my parents spent here last year. Those are very special and precious memories for me.
Cleaning the house (which is a never ending vicious cycle!!)
Constantly nagging and annoying my dear husband..hehe... :)

Besan Burfi reminds me of Mysore Pak, whenever any of my colleague used to visit Bangalore, or any colleague coming from bangalore office our team used to order for packets of Mysore Pak...

the consistency i got after stirring is not as expected.followed all ur instructions correctly.ie,didnt get halwa cosistency.got like puttu.what might be my mistake.i m not used to sweet making.
