Ingredients :
Besan (Chickpea flour) - 1 Cup
Sugar - 1Cup
Ghee - 3/4th of a cup (The original recipe called for only few spoons and i've had bad result with mysore pak with less ghee, so i increased the qty of ghee)
Cardomom powder - a pinch
Saffron - a pinch
Method :
Melt the ghee in a pan. Roast the besan in the ghee. Keep the stove between sim and med-low. Keep stirring till the raw smell goes away. Now this was my problem area too. I had cold and my nose was completely blocked. So, i took some extra time to roast it :) Also, i feel the correct procedure would have been to roast the besan in few spoons of ghee and then add the rest later.
Now add the sugar, saffron and cardomom and stir for sometime. Add 1/2 cup water and when it is of halwa consistency and leaves the pan on the sides, transfer it to a greased plate and let it cool. Cut into desired shape and enjoy the burfi melting inside your mouth :)
Note : Please increase the quantity of water if you still don't get the desired consistency.

Besan Burfi reminds me of Mysore Pak, whenever any of my colleague used to visit Bangalore, or any colleague coming from bangalore office our team used to order for packets of Mysore Pak...

Yummy besan burfi. Great to know the correct proportion of ghee.Many people dont tell this and i have failed many times in doing this sweet.

the consistency i got after stirring is not as expected.followed all ur instructions correctly.ie,didnt get halwa cosistency.got like puttu.what might be my mistake.i m not used to sweet making.
